The Wellington Shire Environmental Health team is responsible for the prevention of disease within the community. This role is varied and works under legislation such as the Food Act 1984, the Public Health and Wellbeing Act 2008 and the Environment Protection Act 1970.

Tasks undertaken by the four Environmental Health Officers (EHO) for the shire include:
 
 routine inspection of Food Act registered premises
 provision of community and school immunisation programs
 implementation of a mosquito control program
 routine inspection of Health Act registered premises such as tattooists, hairdressers and beauty salons
 investigation of infectious disease outbreaks
 routine food and water sampling
 routine inspection of caravan parks and accommodation premises
 investigation of residential complaints relating to noise and odours
 health promotion and education
 approval of wastewater disposal (eg. installation of septic tank systems)
 provision of advice on general pest control and identification
 eradication of bee and wasp nests
 testing water quality in public pools and spas
 monitoring of community food events
 infectious waste disposal
 regulation of the Tobacco Act 1987.
